About the Winery

Covalence is a partnership between two friends from the Carolinas, Adam Ressner and Jonathan Rhyne, named for the covalent bond, which the winery calls the strongest bond in the universe. The idea is connection: family, friends and community, and the long human tradition of sharing wine. Their first vintage was 2022.

The Cabernet comes from a two-acre hillside vineyard in the Stags Leap District, up behind Quixote, that belonged to the late Carl Doumani, founder of Stags' Leap Winery and Quixote. Aaron Pott makes the wine. Only 205 cases of the 2022 were bottled, and it drew 97 points from James Suckling and 95 from The Wine Advocate, which rated the 2023 at 97 to 99 points from barrel.

Covalence sells through its website, in three-packs and magnums, and through its mailing list; the 2023 wines debut in spring 2026. There is no tasting room or published visit program, so it does not receive visitors. The day below stays close to the Stags Leap District and Yountville, at estates that pour Cabernet of a similar caliber.

A Suggested Six-Hour Day

Pickup at 10:00 a.m. from a nearby hotel such as Bardessono or Hotel Villagio.

Since Covalence does not host visitors, this day takes you to three sought-after estates nearby that do. Both hotels are in Yountville, about 5 minutes from the first stop. The day fits about six hours, and extra time can be added by the hour.

10:15 · Addax Wines

About 8 minutes away. Russell Bevan's Oakville Cabernet and coastal Pinot Noir, poured by appointment at HQ Winery on Hoffman Lane just south of Yountville. Tastings are $75 to $200 depending on the experience; we plan about 75 minutes.

11:45 · To Kalon Vineyard Company

About 10 minutes away. Private, guided tastings of Cabernet from the famous To Kalon Vineyard, poured at the Oakville estate where the vineyard grows. $180 per person plus an 18% hospitality fee, for 1 to 8 guests; we plan about 90 minutes. By reservation, 10 a.m. to 4 p.m.

About 10 minutes away. Lunch at Bottega, an Italian restaurant on Washington Street in Yountville, serving from 11:30 a.m. Tuesday to Sunday. Prefer a picnic? We can arrange a catered picnic at a winery that allows one; the cost is quoted when you book.

About 10 minutes away. A family's ten-acre Oakville Cabernet vineyard beside its own restaurant, Brix, where library Cabernets are poured in the gardens and vines. The Kelleher Cabernet Vertical is $95, 60 to 90 minutes. By appointment; closed Monday and Tuesday.

Kelleher is closed Monday and Tuesday, so plan this day for Wednesday to Sunday. The day runs slightly past six hours; extra time is billed by the hour. Three wineries is the right pace for a day of serious tasting.
