Aubry Wines is the work of winemaker Dylan Lundstrom, whose path ran from Screaming Eagle to Portugal and Montpellier, with about fifteen years of vineyard and cellar experience. He farmed a one-acre Coombsville vineyard himself, organically and vine by vine, and made the wine alone, with no assistants or consultants. The bluebird on the label honors the bluebirds that served as natural pest control in that vineyard.
The result is The Quiet Collection, Coombsville Cabernet Sauvignon from the 2019, 2020 and 2021 vintages, about 100 cases in all and sold only as a three-vintage set; the winery says it will never be made again. The wines are fermented with native yeast, aged 22 months in 25 percent new French oak and bottled at about 13 to 13.5 percent alcohol. A 2022 Chardonnay comes from Steve Matthiasson's organically farmed vineyard in Oak Knoll, made in stainless steel and neutral barrels without malolactic fermentation.
Production stays under 100 cases per vintage, sold direct through the winery's website, at $225 for the Cabernet set and $50 for the Chardonnay. There is no tasting room, and Aubry does not receive visitors. The day below stays in and around Coombsville, with a stop at Matthiasson, where Aubry's Chardonnay is grown.

Pickup at 10:00 a.m. from a downtown Napa hotel such as Andaz Napa or Archer Hotel Napa.
Since Aubry Wines does not host visitors, this day takes you to three sought-after estates nearby that do. Both hotels are on First Street in downtown Napa, about 10 minutes from the first stop in Coombsville. The day runs about five and a half hours, and extra time can be added by the hour.
About 10 minutes away. A small family estate in the hills east of Napa, whose winemaker wrote the petition for the Coombsville appellation. The private tasting of estate wines is $50, one party at a time; we plan about an hour. Monday to Friday by appointment, arranged by email.
About 10 minutes away. A 15-acre Coombsville estate of Bordeaux varietals, poured at Vintner's Collective in a historic building on Main Street in downtown Napa. The No. 1, five wines at the bar, is $50, about 45 minutes, with no reservation needed.
About 5 minutes away. A food hall on First Street with counters for everything from tacos to oysters, open daily from 7:30 a.m.; we confirm hours when we book. Prefer a picnic? We can arrange a catered picnic at a winery that allows one; the cost is quoted when you book.
About 15 minutes away. Steve and Jill Matthiasson's family winery, known for organic farming and rare Italian grapes, and the grower of Aubry's Chardonnay. The standard tasting of five to six wines is $75, about 75 minutes. Open daily by appointment, with limited tastings.

Farella hosts Monday to Friday only, so plan this day for a weekday. On a weekend, Palmaz Vineyards in Coombsville ($150, about two hours) can replace Farella.
