Bill Hill founded William Hill Estate in 1976 and, as the winery tells it, was one of the first to seek out Napa's hillsides for vineyards instead of the valley floor. E. & J. Gallo bought the winery in 2007. Today William Hill is a widely distributed label and an official wine of the PGA of America.
The estate covers about 200 acres of rolling hills on the Silverado Bench, on Atlas Peak Road east of the city of Napa, with a large barrel cellar and modern fermentation equipment. Its Napa Valley Collection, currently a 2022 Chardonnay and a 2021 Cabernet Sauvignon, is rooted in that estate. A broader California Collection covers Chardonnay, Sauvignon Blanc, Pinot Noir, Merlot and Cabernet.
William Hill wines are sold through retailers and delivery services such as Instacart and DoorDash. The website lists no tastings or reservations, and the estate does not receive William Hill visitors. The day below stays in the same corner of the valley, with a cave tour in the eastern hills, a private tasting downtown and an afternoon in a working vineyard.

Pickup at 9:45 a.m. from a nearby hotel such as Silverado Resort or Milliken Creek Inn.
Since William Hill does not host visitors, this day takes you to three sought-after estates nearby that do. Greater Fool's first cave tour starts at 10 a.m., so pickup is at 9:45; Silverado Resort, near the William Hill estate at the foot of Atlas Peak, and Milliken Creek Inn are both about 15 minutes away. The day runs a little past six hours, and extra time can be added by the hour.
About 15 minutes away. A small co-fermented Napa label poured in The Caves at Soda Canyon, an underground winery with a terrace looking down the valley. The cave tour and tasting is $50, about 90 minutes. By appointment, daily at 10 a.m., 12:30 p.m. or 2:30 p.m.
About 20 minutes away. Howell Mountain Cabernet from Toby and Dawn Forman's hand-farmed estate, poured at a private Estate Experience in downtown Napa that covers the vineyard, the mountain and the winemaking. $200 per couple, waived with a six-bottle purchase. By request; we arrange it on your behalf.
About 12 minutes away. Lunch at Boon Fly Café in Carneros, which serves its daytime menu every day until 4 p.m. Prefer a picnic? We can arrange a catered picnic at a winery that allows one; the cost is quoted when you book.
About 15 minutes away. A private afternoon tasting in the middle of a working vineyard, poured by second-generation Napa winemaker Chris Corley and winegrower Julianna Corley with light seasonal bites. $75 per person; we allow about 90 minutes. By reservation only; the vineyard location is confirmed with the booking.
