Calistoga · Napa Valley
A young Chardonnay and Cabernet house pouring in a wine cave that survived the Glass Fire, and a suggested six-hour day of tasting around it.

In 2021 the Eppright family of Austin, Texas (Fred and Paula and their sons Trey and Matt) bought the former Dutch Henry Winery property on the Silverado Trail, about 10 acres just south of Calistoga. The 2020 Glass Fire had burned the winery, but the wine cave survived. The family replanted about 2.4 acres, once Syrah, to Cabernet Sauvignon, and made its first wines from purchased fruit.
Parable makes only two varieties, Chardonnay and Cabernet Sauvignon, from single vineyards. Cabernet comes from Beckstoffer Bourn in St. Helena and Vangone Vineyard. Chardonnay comes from Antica on Atlas Peak, Larry Hyde & Sons in Carneros and Ritchie Vineyard in the Russian River Valley, which is fermented in a 500-gallon concrete egg. Winemaker Kale Anderson made the first releases.
Visits are small and by appointment, set up directly with the winery. Tastings take place in the 4,500-square-foot cave where the wines age, with a flight of five current releases and a seasonal cheese and charcuterie plate. A new winery and tasting room are planned for the estate, so this is an early look at a label still finding its home.
The Wine Cave Tasting pours five current releases with a seasonal cheese and charcuterie plate. The winery does not publish its price online; it is confirmed when the appointment is made.
Tasting fees as of September 2026. Wineries set and collect their own fees, and they change from time to time.

Pickup at 10:00 a.m. from a nearby hotel such as Four Seasons Resort and Residences Napa Valley or Solage.
Both hotels are a short drive down the Silverado Trail. Four Seasons Resort and Residences Napa Valley, which has its own working winery, is about 5 minutes from Parable, and Solage, an Auberge resort known for its spa and mud baths, is about 8 minutes away. The Wine Cave Tasting, five current releases with a cheese and charcuterie plate in the estate cave. We allow about an hour.
About 18 minutes away. A family winery on the Hayne Vineyard at the foot of the Mayacamas in St. Helena, where Zinfandel and Petite Sirah were replanted in 1902 and 1903 and some of those vines still produce. A private tasting and tour of the vineyard with current releases is $45 and runs about 75 minutes, waived with each 3-bottle purchase per person. By appointment Tuesday to Saturday; all guests must be 21 or older.
About 12 minutes away. Lunch at the restaurant on the Brasswood estate on Highway 29 north of St. Helena, open daily from 11:30 a.m., with seating on the patio overlooking the grounds. Prefer a picnic? We can arrange a catered picnic at a winery that allows one; the cost is quoted when you book.
About 15 minutes away. A family winery north of downtown Calistoga making Old World-style Petite Sirah, Zinfandel and estate Cabernet Sauvignon, with tastings held outdoors. The Estate Tasting is $35 and runs 60 to 90 minutes, refundable with each 2-bottle purchase. By appointment daily; the last tasting starts at 3 p.m.
Back by about 3:45 p.m., within six hours of pickup.
Adds about an hour. The Salon at Heitz Cellar sits on the St. Helena property Joe and Alice Heitz bought in 1961, a few minutes from Chase Cellars. Visits are by reservation, and walk-ins are welcome when availability allows; the Napa Valley Legacy tasting is $75 (45 to 60 minutes). Open daily 10 a.m. to 3:30 p.m., for guests 21 and over.
About $80 per person in tasting fees at Chase Cellars and Tedeschi Family Winery, plus the Parable tasting fee, which is confirmed when the appointment is made. Fees are paid directly to each winery.
Chase Cellars hosts visits Tuesday to Saturday, so this day works best then. On a Sunday or Monday we swap in another St. Helena winery and confirm the plan when you book.
