About the Winery

Hibou, French for owl, was started by first-generation vintners Jason and Hilary Driscoll. Jason came to wine through cooking: after training as a chef at the Culinary Institute of America in St. Helena, a Napa Valley harvest drew him into the cellar. The first Hibou bottling came from two small blocks of Riddle Vineyard in the Green Valley, which Jason secured by knocking on the grower's door with a homemade pâté and a bottle of Champagne.

Today Keith Emerson makes the wines as Bordeaux-style bottlings from organically grown Sonoma Valley fruit: a white wine of Sauvignon Blanc, Sauvignon Musqué and Semillon, a Sonoma Valley red and Cabernet Sauvignon, and a Moon Mountain District Cabernet from a single vineyard between 1,500 and 1,800 feet. The reds are bottled unfined and unfiltered.

Hibou has no tasting room of its own. Its wines are part of The Yount Room, a collective tasting room in the historic Yountville Station on Washington Street, alongside labels such as Cornerstone, Conn Creek, Cain and Tilth. It is an easy, central stop in a town full of tasting rooms and restaurants. We confirm current details when we book.

Tasting Fees

$50 per person for The Yount Room's Collection Flight of hand-selected pours from its brands, which we ask to include Hibou. Varietal flights of all Cabernet Sauvignon, all Pinot Noir or all white wines are also offered. We confirm the current price when we book.

Tasting fees as of October 2026. Wineries set and collect their own fees, and they change from time to time.
