About the Winery

Fairest Creature is the project of founder and proprietor Jayson Hu, a longtime collector who set out, in his words, to create "the best Cabernet Sauvignon ever." The first vintage was 2018. Instead of one winemaker or one vineyard, he brought four winemakers together and sourced fruit from sites across Napa Valley, some already famous and some with great potential.

Each winemaker gets the same fruit and makes his own wine: Sine Fine by Benoit Touquette, Polyspline by Philippe Melka and Perihelios by Thomas Rivers Brown. Michel Rolland, until his death in 2026, picked his favorite barrels of the three to blend Triniceros, the flagship, sold only in large formats. The standard set is six bottles, two of each, with creatures from classical Chinese literature behind the names.

Fairest Creature has no public tasting room, but the winery welcomes tastings by appointment as an introduction to the wines and the idea behind them. You create an account on its website to use the reservation system, or contact hospitality directly; we handle that for you. The location is given with the appointment, and the wines are sold by allocation request.

A Suggested Six-Hour Day

Pickup at 10:00 a.m. from a nearby hotel such as Alila Napa Valley or Harvest Inn. The tasting location and time are set with the booking, so the start may move.

Both are in St. Helena: Alila Napa Valley on the hillside at the north end of town, and Harvest Inn on Highway 29 at the south end. The day below runs about seven hours, and extra time can be added by the hour.

A tasting by appointment, at the location given with the booking. No length is published, so we allow about an hour and a quarter.

11:55 · Lokoya

About 25 minutes away, up Spring Mountain. Jackson Family Wines' Spring Mountain estate, where a host walks you to a balcony over the valley to taste four mountain Cabernet Sauvignons, from Mount Veeder, Howell Mountain, Spring Mountain and Diamond Mountain, side by side. The Mountain Experience is $250, about 90 minutes. By appointment, prepaid on Tock; parties of 2 to 6, 21 and over.

About 25 minutes away, back down the mountain. Classic American fare at picnic tables on Main Street in St. Helena, open daily from 11 a.m. Prefer a picnic? We can arrange a catered picnic at a winery that allows one; the cost is quoted when you book.

About 25 minutes away, up Pritchard Hill. A family estate high on Pritchard Hill, farmed organically since 1986, about a 15-minute climb up a winding road from the Silverado Trail. The estate tasting is $150, about 90 minutes. By reservation only.

With Spring Mountain in the morning and Pritchard Hill in the afternoon, the day has longer mountain drives and runs about seven hours. Fairest Creature sets its location and time with the booking, so times may shift.
