About the Winery

Valette Wines is the wine label of Chef Dustin Valette, whose family has been in Healdsburg since his great-grandfather came from France in the early 1900s. Dustin and his brother opened Valette restaurant on Center Street in 2015, in a building on the site of their great-grandfather Honoré Valette's bakery, and the wine partnerships began the following year.

Each wine is made in collaboration with a well-known winemaker: Sauvignon Blanc and Cabernet Sauvignon by Jesse Katz, Chardonnay by David Ramey and Tom Rochioli, and Pinot Noir by Bob Cabral and Michael Browne. The list also includes a Russian River Valley rosé of Pinot Noir and a grower Champagne. The wines are made to go with food, which is how the family pours them.

Tastings are built around the kitchen: a flight with house-cured charcuterie and cheese, a three-course pairing, or the Valette wine pairing with dinner in the restaurant. On weekends Valette Wines pours on the patio at Valette, with flights of small pours or pours matched to a bite. The winery's site says a Valette Wine Lounge, sharing a wall with the restaurant, opens in 2026.

Tasting Fees

Valette Wines does not publish prices for its patio flights, Flights & Boards or 3 Course Pairing; we confirm them when we book. With dinner at Valette restaurant, the Valette wine pairing is $95 per person.

Tasting fees as of October 2026. Wineries set and collect their own fees, and they change from time to time.
