William and Leticia Jarvis met in Mexico, lived for years in France and came to wine through travel and study. William, a Navy veteran, ran a telecommunications company in Silicon Valley before the couple bought a weekend estate in Napa. They spent about ten years nurturing the vineyard before building the winery.
The winery is the reason to go. It is entirely contained in 45,000 square feet of cave tunneled into the Vaca Mountains, four miles east of downtown Napa, and Jarvis says it was the first in the country to fit a whole winemaking operation underground. The chambers are true parabolas, with bronze doors, fiber optic chandeliers, and a stream and waterfall running through the middle.
The estate vineyards sit about 1,000 feet above the valley floor between Mount George and Milliken Canyon, cooler than Carneros. The Vintage Tour and Tasting walks the cave before the wines are poured; small groups and limited daily tours mean it often books up weeks ahead. Wear comfortable shoes for the cave floors.
$150 for the Vintage Tour and Tasting. Groups of 13 to 20 are $175, and larger groups $200. The Founders' Reserve Experience is for Inner Circle members and their guests.

Silverado Resort at the foot of Atlas Peak is about 12 minutes from Jarvis, and Milliken Creek Inn on the Silverado Trail about 12 minutes. The day below fits a six-hour tour, and extra time can be added by the hour.
The Vintage Tour and Tasting ($150). The winery does not publish a duration; we allow about 90 minutes for the cave walk and tasting.
About 15 minutes away. A small family label from a hillside vineyard above the valley, poured in private, seated tastings at The Caves at Soda Canyon. The Private Tasting is $95; the winery does not publish a duration, so we plan about an hour. Prepaid, by appointment only; no same-day requests.
About 15 minutes away. Lunch at Oenotri on First Street in downtown Napa, an Italian restaurant serving lunch daily from 11:30 a.m. Prefer a picnic? We can arrange a catered picnic at a winery that allows one; the cost is quoted when you book.
About 12 minutes away. Jeff and Karen Fontanella's family winery up an oak-lined road on Mount Veeder, with a peek into the barrel room and a patio that looks over the vines. The tasting is $65 plus tax for 75 minutes. By appointment, daily, with reservations from 10 a.m. to 3:30 p.m.; 21 and over.
