Mario Bazán came to Napa Valley from Oaxaca, Mexico, in 1973 and worked his way up from vineyard laborer. At Robert Mondavi Winery he was put in charge of vineyards including To Kalon and Opus One, then spent three years at Stag's Leap Wine Cellars before starting his own vineyard management company in 1997. He still farms several hundred acres from Napa to Calistoga.
Mario and Gloria Bazán married in 2005, bought their family estate at the base of Atlas Peak and released the first Mario Bazán Cabernet Sauvignon from that vintage, made with founding winemaker Victoria Coleman. The estate vineyard, planted in 2006 on the border of the Coombsville AVA, is the backbone of the wines, which are now made by Kian Tavakoli, formerly of Opus One and Clos du Val.
Guests taste in the family's room in downtown Napa, where walk-ins are welcome but reservations are encouraged. The tasting to plan around is Roots & Flavors: six Mario Bazán wines paired with three vegetarian Oaxacan mole dishes, guided by Gloria Bazán, a tribute to Mario's homeland. For Cabernet lovers, the Legend tasting adds a single-barrel Cabernet Franc and library wines.
$60 for the Tradition Tasting Experience, 45 to 60 minutes. $85 for the Legend Tasting Experience with library wines, 60 to 90 minutes. $125 for the Roots & Flavors Experience, six wines with three Oaxacan moles, 60 to 90 minutes.

Roots & Flavors must be booked at least a week ahead; the dishes are vegetarian and made with nuts, so it is not recommended for nut allergies. Groups of 8 or more contact the winery directly. Wine club members taste free.
Pickup at 9:40 a.m. from a nearby hotel such as Silverado Resort or Milliken Creek Inn.
We start a little early to make the 10 a.m. cave seating at Buoncristiani, since Bazán opens at 11. Silverado Resort, a golf and spa resort at the foot of Atlas Peak, is about 12 minutes from the caves, and Milliken Creek Inn about 15 minutes. The day fits about six hours, and extra time can be added by the hour.
About 15 minutes away. The Buoncristiani brothers' family winery in The Caves at Soda Canyon, built entirely underground, with a view down the canyon toward the Stags Leap District. The Signature Tour & Tasting is $85, about 90 minutes. Seatings at 10 a.m., 12:30 and 2:30 p.m., requested at least a week ahead.
About 20 minutes away. The Tradition Tasting, 45 to 60 minutes ($60). The Legend Tasting ($85) or Roots & Flavors ($125) can run 90 minutes and moves the rest of the day back about 30 minutes.
About 15 minutes away. Lunch at Brix on Highway 29 near Yountville, a sit-down restaurant beside its own gardens. Lunch is served from 11:30 a.m. Prefer a picnic? We can arrange a catered picnic at a winery that allows one; the cost is quoted when you book.
About 8 minutes away. An elevated tasting room with views across the valley, where families, well-behaved pets and picnics are welcome. The Big Red's Flight is $60 (complimentary with a $120 purchase); we allow about an hour. By reservation; last tasting at 4 p.m.

Bazán is open Thursday to Monday, so plan this day for one of those days. Three wineries is the right pace for a day of serious tasting.
