Asymmetric belongs to proprietors Adam Jackson and Brent Walker, who came to Coombsville in 2020 and found Cabernet Sauvignon already growing that, in their words, asked to be taken seriously. Adam, born in Cleveland, has spent twenty years founding and backing technology companies in the Bay Area. Brent, a builder of custom homes from Cincinnati, learned wine from the sommeliers of Pebble Beach and years in Napa's cellars.
The idea is simple: one wine from one vineyard. The estate Cabernet grows in the volcanic hills of Coombsville, in the cool southeastern corner of Napa Valley, where morning fog off San Pablo Bay and long, mild afternoons slow the ripening. The fruit is picked by hand at first light, aged 29 months in French oak and released only when the partners judge it ready.
Each vintage goes first to the release list, then to the online shop; the 2023 is the current release, with 2020 to 2022 offered as library wines. Asymmetric publishes no tasting room or visiting program, so it does not receive visitors. The day below takes you to Coombsville and Carneros estates that do.

Pickup at 10:00 a.m. from a nearby hotel such as Andaz Napa or Archer Hotel Napa.
Since Asymmetric does not host visitors, this day takes you to three sought-after estates nearby that do, starting in Coombsville. Andaz Napa and Archer Hotel Napa are both in downtown Napa, about 12 minutes from the first stop. The day fits about six hours, and extra time can be added by the hour.
About 12 minutes away. A Coombsville estate with an underground winery and Bordeaux-style wines made by Julien Fayard, visited by advance inquiry, one party at a time. Any fee is confirmed when the estate accepts; we allow about 75 minutes.
About 10 minutes away. The Ackerman Heritage House, a tasting salon just steps from downtown Napa, pouring organically farmed Coombsville Cabernet from the Stonehaven Vineyard. The Ackerman Tasting is $65; we allow about an hour. By reservation, Tuesday to Friday.
About 15 minutes away. Lunch at Boon Fly Café in Carneros, which serves its daytime menu every day until 4 p.m. Prefer a picnic? We can arrange a catered picnic at a winery that allows one; the cost is quoted when you book.
About 8 minutes away. A family farm winery in Carneros known for age-worthy, unfiltered Cabernet Franc, where the Current Release tasting of five wines is personal and unhurried. The fee is confirmed when we book; we allow about an hour. By appointment, Monday to Saturday.
