More than three decades ago, tech entrepreneur Ridgely Evers and Bay Area chef Colleen McGlynn bought a hillside on Westside Road as a weekend retreat. In 1990 they imported olive trees from Tuscany, and their 1997 olive oil became the first American extra virgin oil to win a blind tasting against Tuscan oils. A glass of 1994 Sagrantino di Montefalco in a New York restaurant in 1999 turned them to wine, and in 2000 they planted Sangiovese and Sagrantino on the hilltop Hawk Mountain Vineyard, named for Montefalco.
In 2008 they bought a grapevine nursery on the flat land along Dry Creek, which had been farmed with chemicals for 40 years, and after that harvest they gave up conventional methods for Biodynamic and regenerative farming. Today DaVero is a certified organic and Biodynamic farm growing Mediterranean grapes such as Sangiovese, Barbera, Montepulciano, Greco, Fiano, Sagrantino and Malvasia Bianco, along with olives, fruit, vegetables and lavender. Its founding rule: grow what belongs here, and be patient.
This is not a conventional tasting room. The farm is part of the visit: you walk past vineyard rows, olive groves and edible gardens with a glass in hand, and yes, you can pet the pigs. The guided tasting covers five Italian-varietal wines and how the farming shapes them, and the Sensory Journey adds a walk through the farm and pairing bites. For a slower afternoon, the courtyard takes bottle service by the table.
$35 for A Guided Taste of five Italian-varietal wines, 60 minutes. $55 for the Sensory Journey, a farm walk and five wines with pairing bites. $50 per table for courtyard bottle service, wine extra, 120 minutes.
Tasting fees as of September 2026. Wineries set and collect their own fees, and they change from time to time.
