Mark Aubert grew up in nearby St. Helena with farming in his blood, and he and his wife Teresa founded Aubert Wines in the late 1990s. Before that he made his name as a winemaker for others, including as head winemaker at Peter Michael. Since 2010 the winery has been on the Silverado Trail just outside downtown Calistoga, in the Calistoga AVA.
Aubert makes only Chardonnay and Pinot Noir, including single-vineyard bottlings such as Hudson, Larry Hyde & Sons, UV-SL, Lauren, Eastside and CIX. Mark describes his approach as minimal intervention guided by the farming. The wines are sold through a mailing list, with a waiting list to join.
Visits happen in The Tasting Salon, as a winery tour and tasting. Members sign in to request an appointment, and anyone else signs up for the waiting list to make a request; priority goes to actively purchasing members. Once Aubert confirms a time, we drive you there and build the rest of the day around it.

Pickup at 10:00 a.m. from a nearby hotel such as Indian Springs or Dr. Wilkinson's. Aubert sets appointment times, so the start may move once the winery confirms.
Both are in downtown Calistoga, about 5 minutes from the winery: Indian Springs, the historic hot springs resort, and Dr. Wilkinson's, the mud bath resort on Lincoln Avenue. The day below fits a six-hour tour on a weekday, and extra time can be added by the hour.

About 12 minutes away. A restored 19th-century homestead on Diamond Mountain making single-vineyard, single-varietal wines. The private estate tasting includes a walk of the historic farmstead and a chef-crafted cheese and charcuterie plate; we allow about 75 minutes. Tasting fees to be verified upon reservation. By appointment only.
About 15 minutes away. Lunch at The Charter Oak at the south end of St. Helena, Christopher and Martina Kostow's family-style New American restaurant, open daily for lunch. Prefer a picnic? We can arrange a catered picnic at a winery that allows one; the cost is quoted when you book.
About 8 minutes away. A small St. Helena estate where the visit starts with a glass of sparkling wine and a walk into the vineyard, then a seated tasting under the Garden Arbor. The Estate Vineyard Experience is $95, about 75 minutes, for groups of up to 6. By reservation.

Adds about an hour. The Lawer family pours its Knights Valley estate wines at Eight North, its restaurant and tasting room on Lincoln Avenue in downtown Calistoga. Walk-ins are welcome; the Lawer Estates Wine Flight of four wines is $45. Open Thursday to Monday from 11 a.m. into the evening; closed Tuesday and Wednesday.
About $95 per person for Crocker & Starr, plus the fees for Aubert and Theorem, which are confirmed when we book. Fees are paid directly to each winery.
Aubert's appointments are set on weekdays, so plan this day Monday to Friday. Lawer Estates' tasting room is closed Tuesday and Wednesday.
