About the Winery

Once and Future Wine is the project of Joel Peterson, who learned winemaking from Joe Swan beginning in 1972 and founded Ravenswood in 1976. Ravenswood grew to nearly one million cases a year and became the best-selling red Zinfandel brand in the world. Peterson helped found ZAP (Zinfandel Advocates and Producers) and has been inducted into the Vintners Hall of Fame. He describes Once and Future as a return to his original vision for Ravenswood.

The wines come from special vineyards, many of them old field blends, made by hand in open-top redwood fermenters with hand punch-downs. The lineup includes Zinfandel from the Bedrock Vineyard in the Sonoma Valley (an 1888 planting), Old Hill Ranch, Dickerson in Napa Valley, Belloni in the Russian River Valley, Green & Red and Vogensen, as well as a Mataro from Oakley Road in Contra Costa, a Sangiacomo Merlot from Carneros and the Frances Cuvée, a co-fermented Bordeaux blend from Bedrock Vineyard.

The company lists a post office box in Glen Ellen, sells online and through its mailing list, and has no tasting room, so it does not receive visitors. The day below starts at Bedrock Wine Co., run by Peterson's son Morgan Twain-Peterson, and continues to two historic Sonoma estates.

Tasting Fees

Once and Future does not offer tastings. On the day below, expect about $180 per person: $45 at Bedrock, $90 at Hanzell and $45 at Gundlach Bundschu.

Since Once and Future Wine does not host visitors, this day takes you to three sought-after estates nearby that do. El Dorado Hotel and Ledson Hotel are both on the Sonoma Plaza, a few minutes from the first stop. The day runs about six hours, and extra time can be added by the hour.

10:05 · Bedrock Wine Co.

About 5 minutes away. Old-vine wines poured in General Joseph Hooker's 1850s house off the Plaza, made by Morgan Twain-Peterson, Joel Peterson's son, whose Bedrock Vineyard also supplies Once and Future. $45 for the Bedrock Heritage Tasting, waived with a three-bottle purchase. By appointment only. We plan about 75 minutes.

About 10 minutes away. Burgundy-inspired Chardonnay and Pinot Noir made on this hillside since 1953. $90 for the Hanzell Heritage Tour & Tasting of four estate wines, about 90 minutes. By appointment only, Monday to Friday.

About 10 minutes away. Lunch at El Dorado Kitchen, on the west side of the Sonoma Plaza. We confirm hours when we book. Prefer a picnic? We can arrange a catered picnic at a winery that allows one; the cost is quoted when you book.

2:40 · Gundlach Bundschu Winery

About 10 minutes away. The Bundschu family's Rhinefarm estate, farmed since 1858, with a hillside wine cave. $45 for the seated Rhinefarm Tasting of estate wines, or $30 for the standing bar tasting. Open daily 11 a.m. to 5:30 p.m.; reservations encouraged. We plan about an hour.

Hanzell hosts Monday to Friday only and closes to visitors in August and early September for harvest, so plan this day for a weekday. On a weekend we can swap in another Sonoma estate.
